Protein Banana Muffins

Soft banana muffins made with plant protein and whole grains.

Ingredients
• 1 cup whole-wheat flour
• 1 tsp baking powder
• 3 tbsp Whole Blending Plant Protein
• 1 tbsp melted coconut oil
• 1 cup soy milk
• 1 ripe banana

Instructions
• In a bowl, mix flour, baking powder, and plant protein.
• In a separate bowl, mash the banana.
• Add soy milk and melted coconut oil to the banana and mix.
• Combine the wet and dry ingredients and stir until just mixed.
• Spoon the batter into a muffin tin.
• Bake at 180°C (350°F) for about 20 minutes, or until a skewer comes out clean.
