Vegan Protein Cup Muffin (Cuffin)
A simple vegan cup muffin you can make in the microwave – soft, chocolatey, and packed with plant protein. Great as a lighter dessert or a quick pre/post-workout snack.
Ingredients
• 2 scoops Whole Blending Plant Protein
• 1 tbsp almond flour
• 1 tsp cocoa powder (optional)
• 1 tsp baking powder
• Almond milk (just enough to make a thick, cake-like batter)
• A small handful of chocolate chips
For the chocolate protein topping
• 1 tbsp Whole Blending Plant Protein
• 2 tsp almond milk
Instructions
• In a mug or small heatproof cup, add plant protein, almond flour, cocoa powder, and baking powder. Mix well.
• Add almond milk little by little and stir until you get a thick, smooth batter.
• Fold in the chocolate chips.
• Microwave for about 4 minutes, or until the muffin is set and springs back lightly when touched (time may vary by microwave).
• In a small bowl, mix 1 tbsp plant protein with 2 tsp almond milk to make a thick chocolate “coating.”
• Spoon the coating over the warm muffin and enjoy.
